Parole Chocolates™ was started by a prison physician, hence the name. Dr. Slivko did her medical training at the University of Alberta, and Family Medicine residency training at the University of British Columbia. In fact, UBC was our first big client.
Dr. Slivko completed her Chocolatier Diploma at the Pastry Training Centre of Vancouver. During her training, Dr. Slivko acquired a loyal fan base among her friends and coworkers, who provided the encouragement needed to make Parole Chocolates™ a reality.
We focus on the timeless appeal of chocolate products: appearance, freshness, and, of course, taste. Our bars and bonbons are made with Cacao Barry® couverture-grade chocolate, a choice of top pastry chefs around the world. Our fillings are based on Valrhona® chocolate, widely considered to be the best chocolate in the world. Our bars and bonbons are made without any added preservatives, artificial flavourings, emulsifiers, or stabilizers∗. As such, their shelf life is shorter than you may have grown to expect from mass-produced confectionery products – not that it appears to ever last that long in our customers’ hands! While we have a set menu of offerings, we are always working on new recipes. Feel free to peruse our catalogue, and if there is something you want to see that is not listed, contact us and we will create a recipe featuring your favourite ingredient!
