DSC_0810Our macarons are made by hand. As anyone who has ever tried macarons knows, they are some of the most capricious cookies you could attempt! Temperature, humidity, your oven, the stiffness of the egg whites – they can all make a dramatic difference in outcome. I discarded on the order of several hundred failed macarons until I perfected the process. We make them the proper way, in a nice copper bowl! Our macarons are not flavoured, in order to allow the flavour of our homemade ice cream to shine, but they contribute a lovely chewy texture and a beautiful complimentary colour.

Macaron ingredients: egg whites, sugar, almond flour (we use Bob’s Red Mill), icing sugar, and artificial colouring.

Our ice cream is made by hand, whisking an egg custard base on the stovetop, then churning the ice cream in a small ice cream maker the next day.

LYCHEE MACARON ICE CREAM SANDWICH

Ingredients: egg yolk, heavy cream, milk, skim milk powder, sugar, Soho lychee liqueur (contains traces of alcohol)

BLACK SESAME MACARON ICE CREAM SANDWICH

Ingredients: egg yolk, heavy cream, milk, skim milk powder, sugar, black sesame paste (ground black sesame, pasteurized honey)

PISTACHIO MACARON ICE CREAM SANDWICH

Ingredients: egg yolk, heavy cream, milk, skim milk powder, sugar, pistachio paste (ground pistachios)
